Garlic & Herb Croutons

Ingredients

2 cups fresh almond pulp
2 small zucchini (baby marrow) thinly sliced
1 cup ground flaxseed
2 tablespoons extra virgin olive oil
2 teaspoons mixed herbs
2 teaspoons crushed garlic
½ teaspoon salt


Directions

Combine all the ingredients in a large bowl and mix well, using your hands, to make a soft dough. Place the dough on a dehydrator solid sheet and roll it out until it is about 1 cm thick. Cut the dough into cubes and move to your dehydrator mesh sheets. Dehydrate at 40 degrees celsius for 18 to 24 hours or until dry and crisp. Remove and store in airtight container.

Zucchini Crackers

Zucchini Crackers

Ingredients:

2½ cups walnuts
2½ cups peeled cubed zucchini
½ cup ground golden flax seed
¼ cup hemp or sesame seed
2 teaspoons Himalayan salt (less if using fine Celtic sea salt)

Directions:

In a Super blender, grind the walnuts into crumbs
Transfer contents to a bowl
Grind the zucchini into small bits. (Do NOT process into a puree! Keep texture)
Add zucchini to the walnuts. Stir in the flax, hemp, salt, and water (½-¾ cup)
Add enough water to create a thick, spreadable mixture
Spread evenly on solid sheets
Dehydrate at 65 degrees celsius for 3 hours
Turn the temperature to 46 degrees celsius and continue dehydrating for 8-12 hours
Store in an airtight container

Zucchini Chips

Zucchini Chips

Ingredients:

1 medium zucchini/cucumber

1 tablespoon olive oil

Salt and other seasoning to taste


Directions:

Wash and slice zucchini/cucumber into thin slices using a Mandoline slicer or a knife

In a bowl mix zucchini/cucumber with all seasoning

Place zucchini/cucumber on the dehydrator trays

Dry in yourKuto dehydrator or Ezidri dehydrator at 50 degrees celsius or until crispy

Allow to cool to room temperature then eat the chips plain, dip in avocado or guacamole, or add to cold raw soups or salads

Store leftovers in an airtight container
